Vinification & Aging

Manual harvesting to preserve the integrity of the grapes
Cooling of the grapes for 48 hours in a cold room for a delicate aromatic extraction.
Destemming and long cold maceration, enhancing the purity of the fruit
Aged for 12 months in demi-muids (600 L) , providing structure and balance

Alcohol content: 13%

Tasting

Color : Deep garnet red
Nose : First notes of red fruits, blackberry, raspberry and violet , evolving towards aromas of liquorice and cocoa
Palate : Remarkable fruity intensity, supported by a subtle chocolate touch

Evolution & Guard

Enjoy now or keep for 5-10 years (and longer depending on storage conditions)
Evolution : When young, it seduces with its freshness and its bright fruitiness. Over time, it develops more spicy, animal and leathery notes.
Decanting recommended at least 1 hour before serving to reveal all its complexity
